Quick Mediterranean Wrap

whole wheat tortillas

grilled chicken (chunks)

raw spinach

tomato (chopped)

cucumber (chopped)

black olives

cooked couscous (optional)

low-fat feta cheese (crumbled)

tbsp.
plain low-fat yogurt or salad dressing of your choice
Directions
Use leftover cooked chicken and chop it to make 1 cup of chicken pieces.
To assemble the wraps, spread about 1/4 cup of the couscous mixture onto each wrap.
Cover with spinach, tomatoes and cucumber.
Drizzle with olive oil/dressing or yogurt.
Divide the chicken between the two wraps.
Roll the wraps up like a burrito, tucking in the sides to hold the ingredients in.
Cut in half and serve. Share the other wrap with a friend or save for lunch on the next day.
