Power Stir Fry

Ingredients

oz. bag of frozen stir fry vegetables of your choice

lb. turkey breast (other options: tofu, or low-fat beef stew)

oz. low-fat feta cheese (or low-fat mozzarella)

tbs. olive oil or cooking spray

cup cooked brown rice (optional additions)

cup whole wheat rigatoni

Directions

Cut up turkey into small pieces.

Add olive oil to the pan, or spray with cooking oil and add turkey pieces (medium heat).

Cook the turkey until brown, then add the frozen vegetables and cook according to the instructions on the bag, stirring occasionally (5–8 min) .

Add herbs/spices/sauces as desired in the last 2 minutes of cooking.

Turn the heat off and sprinkle with low-fat feta or other cheese of choice.

Season to taste and serve with a side of whole grain bread/roll.

Side options: 1 slice of whole wheat bread or a whole wheat English Muffin

Optional herbs and spices to try: curry, oregano, basil, low-sodium soy sauce
