Grape & Walnut Chicken Salad

Ingredients

cups cooked chicken (chunks)

cup seedless green or red grapes (halved)

cup celery (chopped)

cup walnuts or pecans (chopped)

small green apple

cup plain low-fat yogurt

tbsp. low-fat or non-fat mayo

tsp. salt

tsp. pepper

Directions

Use leftover cooked chicken and chop it to make 2 cups of chicken pieces.
Chop the celery into small pieces.
Halve the grapes.
Chop the apple into pieces. It’s okay to leave the peel on the apple.
Cut the grapes in half.
Put all the ingredients in a large bowl. Stir together.
Serve on a whole wheat bread as a sandwich; or with whole grain crackers as a snack.
