Energizing Salad

Ingredients

cups raw spinach (can substitute kale, arugula, or mixed greens)

oz. grilled chicken (chunks)

cup apples (sliced)

cup cucumber (chopped)

cup mandarin oranges

cup quinoa (optional)

tbsp. walnuts

oz. low-fat feta cheese (crumbled)

tbsp. balsamic vinaigrette dressing or a low-fat salad dressing of your choice

Directions

Use leftover cooked chicken and chop it to make about 3 oz., which should be about the size of the palm of your hand.

Wash the spinach and then add to your bowl. If adding quinoa, make sure to have it prepared prior to making the salad. Quick cooking quinoa packages are available in your local grocery store.

Slice up about half a cup of apples and add to the bowl. Then chop up half a cup of cucumbers and add to the bowl. Then add the half a cup of mandarin oranges. Grab a tablespoon and measure out 1 tablespoon of walnuts and add to the salad.

Once this base of the salad is done, add the grilled chicken on top.

Finally crumble the feta cheese and sprinkle on top and then top it off with the dressing.
